Salade Niçoise calls for the right wine pairing.
Salade Niçoise is a French salad, originated in the Riviera. Ooh la la. Ingredients include tomatoes, anchovies, garlic (usually in the dressing) and black olives, and usually green beans, tuna, new potatoes and hard-boiled eggs. There is often a lot more as well including marinated artichoke hearts and purple-black olives. The dressing is based on olive oil.
