Crab Louis calls for the right wine pairing.
Crab Louis, also known as Crab Louie, is a crab meat salad served for almost one hundred years, especially in the American west. As the name indicates, the key is crab meat, preferably Dungeness Crab, accompanied by hard-boiled eggs, tomato, asparagus, and cucumber on a bed of Romaine Lettuce. You may also choose to add olives and green onions. Don't forget the special dressing based on mayonnaise, chili sauce, and peppers. Do everybody a favor, don't even look at a Crab Louis based on artificial crab.
