Caprese Salad calls for the right wine pairing.
Caprese Salad (Insalata Caprese) is made from sliced fresh mozzarella, plum tomatoes and basil, seasoned with salt, black pepper, and olive oil. If you really want to do it right choose your ingredients from the Campania region of southern Italy, in particular your mozzarella should be di bufala campana (local water buffalo) and your olive oil should be extra virgin from the Sorrento peninsula. In any case this salad's colors are also found in the flag of Italy. A couple words of advice: don't let the salad soak in oil and forget the vinegar, even if it's balsamic.
