Boar calls for the right wine pairing.
Wild boar is lean meat that should usually be cooked at lower temperatures than other meats. Avoid overcooking. You can eat this meat a bit rare if it was raised on a range. Wild boar is excellent barbecued but don't even think of getting it near the microwaving. Wild boar makes tasty sausage, jerky and ground meat products. You can marinate boar in pineapple juice or wine. Guess which I prefer.
In addition to the wines mentioned in our food pairing table you might consider a Syrah or a French Hermitage.
