Halibut calls for the right wine pairing.
Halibut is a type of right-eye Flounder. While it usually weighs about 25 - 30 lb (11 - 13½ kg), it can grow to some 900 lbs (272kg). They eat just about anything they can find. They are typically broiled, deep-fried, or grilled. They have a very low fat content and a dense, firm texture. The Atlantic Halibut has been overfished but arguably the stocks are once more on the upswing.
