Xérès
Xérès, also spelled
Sherry or
Jerez, is a world-famous Spanish fortified wine whose
alcohol content is between 15.5% and 22%. Xérès is produced in Andalusia in southwestern
Spain from the
Palomino and, much less frequently,
from the
Pedro Ximenez white grape varieties.
The sugar content varies widely. Suggested food pairings include tapas, Spanish hors d’oeuvres such as Shrimp,
Lobster, and
Spanish
Ham for dry
Xérès and desserts and
Blue Cheese for sweet
Xérès.
